Crispy Roasted Sweet Potato

Yields1 Serving

 1 ½ Sweet Potato (medium, diced into 1/2 inch pieces)
 ¾ tsp Extra Virgin Olive Oil
  tsp Sea Salt (or more to taste)

Preheat oven to 425ºF (218ºC) and line a baking sheet with parchment paper.


Toss diced sweet potato in olive oil and spread across the baking sheet. Bake in the oven for 30 minutes, tossing at the halfway mark.


Remove from oven and season with sea salt. Enjoy!
